Post-pub nosh neckfiller: El Reg eggs Benedict
A serious hangover mitigation culinary challenge
Hollandaise sauce
Suitably fired up with our muffin triumph, we tackled the spicy hollandaise sauce, for which you will require:
- 125g butter
- 2 egg yolks
- Cayenne pepper
- Chilli powder
- Half a teaspoon of white wine vinegar
- Splash of lemon juice
To the bain-marie, as follows:
To be honest, this took us a few attempts. Temperature control is critical for forming a decent egg/butter emulsion. Anything less than spot on will cause the mix to separate into a curdling horror. A stiff brandy helps, we found. That's for you, not the hollandaise.
